The combination of the homemade ranch and the homemade buffalo sauce is brilliant! I promise you will crave this recipe. I prefer to make the buffalo chicken in the oven, but if you have time to put it in the crock-pot, I have made it that way several times. Just stuff a sweet potato full of buffalo chicken, and add the homemade ranch, and green onions. The ranch is easy to make, just throw all the ingredients into the blender, and pour lots over your buffalo chicken. Add more buffalo sauce, and green onions. I craved this when I had my second, and third babies, as I was a ravishingly hungry woman from breastfeeding a newborn. Warning, people will be asking for the recipe if you make for of your guests!
Buffalo Chicken Stuffed Sweet Potatoes
Ingredients
- 5 sweet potatoes, large
- 1 lbs chicken breast boneless, skinless
- 1 lbs chicken thighs boneless, skinless
Buffalo Marinade/Sauce:
- 2 cup hot sauce, such as Frank's Red Hot
- 1½ cups Butter, ghee or coconut oil
- 4 tsp garlic powder
- 4 TBSP coconut aminos
Toppings:
- Homemade Ranch Dressing (optional)
- 3 green onions chopped
Instructions
- Heat oven to 400°F.
- Thoroughly wash sweet potatoes, and place them on the middle rack in the oven, without foil (see note 1).
- Place the chicken breasts and chicken thighs in a large oven-safe 9"x13" pan.
- Heat the stove to medium-high heat, and in a small sauce-pan place the hot sauce, butter, garlic powder, and coconut amino until the butter is melted. Pour half of the sauce evenly over the chicken.
- Place chicken in the oven and bake for 40 minutes, or until cooked through, and easily falls apart.
- Remove the chicken from the oven and shred with two forks. Once shredded, drizzle the rest of the buffalo sauce over the cooked chicken and mix to combine well.
- Scoop a heaping spoonful of buffalo chicken into your sweet potato; drizzle with lots of homemade ranch, and top with green onions. Serve hot!
Notes
- It may be a good idea to put aluminum foil or a cookie sheet on the second wrack, or under the sweet potatoes to catch dripping.
- While the chicken and potatoes are cooking make the homemade ranch, and refrigerate while waiting.
