Delectable Lebanese chicken kafta with Lebanese rice, and green salad on the side! Full of flavor these chicken kafta are made with ground chicken and lots of good seasonings, then thrown on the grill to cook!
Kafta is essentially a meatball type recipe that is made with chicken, beef or sometimes lamb. This recipe uses Lebanese seasonings and flavors, but there are different kinds of kafta. Kafta is sometimes made using a wood skewer, kind of like a shish kabob.
Fit for a king! This is scrumptious! The grill marks on the kafta will leave you to crave more! It was actually raining outside, but I still decided to brave the storm and cook these in the rain anyway (I got wet, the food didn’t, so that is all that matters!). They cooked beautifully on one side and then I went back out to see the other side and for whatever reason, they didn’t cook so well ( I think I am out of propane). I ended up cooking these in the cast iron pan to finish cooking through. They still turned out well, but the grill flavor is what really made them delicious!
I will be tripling this recipe next time to make for leftovers, and even to freeze them. This was absolutely delicious and so filling.
I really enjoyed learning how to make Feel Good Foodie’s Lebanese Rice. I learned something new and it was so authentic tasting and good! Lebanese rice is made with three ingredients: long grain rice, vermicelli rice noodles, and olive oil. It was not as complicated as I thought it would be and was fun to make! I am glad that I have this recipe for next time.
Chicken Kafta (Lebanese)

Ingredients:
- 1.5 Ibs ground chicken
- 1/3 cup Parsley dried or fresh, finely chopped
- 1/2 small yellow onion finely chopped (I used 1/2 cup Thrive Life Freeze-dried chopped onions)
- 2 cloves garlic mined
- 1.5 teaspoon cumin ground
- ½ teaspoon cinnamon ground
- ½ teaspoon coriander ground
- ½ teaspoon salt finely ground
- ¼ teaspoon black pepper

Instructions:
- Starting with the ground chicken, place all of the ingredients in a large bowl. Mix up the ingredients using your hands, squishing the meat and seasoning together until well blended.
- Form the chicken mixture into *oblong-shaped kafta, about 1 inch thick. You should have enough to form at least 8-9. You can also use a wooden skewer to help you form them or you can do without.
- Before cooking the kafta, grease the grill grates or inside grill pan, and set to medium-high heat. When the grill or pan is good and hot, transfer the kafta to the grill. Grill on each side for 5-6 minutes, or until the chicken is cooked all the way.
- Serve hot with Lebanese rice and salad!
