This delicious and customizable soft-er granola is easily made in the crock-pot! Make with as many, or as little nuts, seeds, dried fruit, shredded coconut, or chocolate as you desire! It is made with a little honey or maple syrup, whichever you prefer. Throw all of the ingredients in the crock-pot, and an hour-and-half later, you have delicious homemade granola!

This granola is great make several different options for breakfast or a healthy snack. One of those options is this Healthy Banana Split that is made with yogurt, berries, coconut chips, G.F. Soft-er Crock-pot Granola, and honey. Scrumptious!

This granola is so customizable, perfect to make it however you would like, sweet or salty or both. You can add nuts (i.e. sliced almonds, pecans, or walnuts, etc); seeds (i.e. sunflower, pumpkin, chia, flax, etc); dried-fruit (i.e. raisins, craisins, etc); and additional cool items (i.e. chocolate chips, etc.) after allowing it to cool.

G.F. Soft-er Crock-pot Granola
Ingredients
- 5-6 cups oats (I used gluten-free)
- 3 TBSP flax seeds or flax meal (optional)
- 1 TBSP chia seeds (optional)
- 1/4 cup Organic Hemp Hearts (optional)
- 1 teaspoon salt
- 1/2 honey (or 1/4 c. honey + 1/4 c. maple syrup)
- 1-3 teaspoons vanilla extract
- ½ cup butter melted (or 1/4 cup butter + 1/4 cup oil; or 1/2 of your choice of oil)
OPTIONAL
- ½ cup slivered almonds or any other nut/seed of choice
- ½ cup shredded or flaked coconut (unsweetened)
- 1-2 teaspoons cinnamon
- ½ cup dried fruit (craisins, raisins, chopped dateds, dried cheries, etc)
Instructions
- Grease the crock-pot so that the granola doesn't stick or burn. You will need a larger crock-pot for this recipe, if you have a smaller one, just reduce the amounts.
- First, add all of your dry ingredients (wait until after to add any cool ingredients, i.e. chocolate chips, etc) to the crock-pot. This recipe is so wonderful because you can change up the ingredients, as you wish, each time.
- Mix dry ingredients to combine well, then add honey (and or maple syrup), vanilla, and melted butter (or oil). Stir well.
- Turn on the crock-pot to high. Stir every 15-20 minutes and cook for 1-1/2 hours. Watch closely at the end to make sure it doesn't burn on the bottom.
- When granola is golden brown and done, pour it on to a cookie sheet, or wax or parchment paper to cool.
- When granola is cooled, add any additional cool add-ins (such as chocolate chips). You can store any extra in quart size freezer baggies.
- Enjoy over yogurt, berries/fruit, ice cream, or milk!
