Greek Chicken Bowls + Couscous
Delicious greek bowls that have grilled greek lemon chicken, kalamata olives, red onion, cherry tomatoes, cucumber, homemade tzatziki sauce and feta cheese. A one-bowl quick, healthy, high-protein, meal!
Ingredients
Grilled Lemon Greek Chicken:
- 2 lbs chicken breast
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 1 TBSP red wine vinegar
- 1/4 cup Greek Yogurt (optional)
- 2 tsp oregano dried
- 1½ tsp salt fine
- 1 tsp black pepper
Greek Bowl:
- 1-2 cucumbers peeled and sliced
- 2 cups grape tomatoes sliced in halves
- ½ red onion sliced
- 1 cup Kalamata olives halved
- 1½ cups feta cheese
- Tzatziki Sauce store bought or see my delicious easy homemade recipe below
- 1-2 cups couscous
Homemade Tzatziki Sauce:
- 1½ cups greek yogurt plain
- 1 tsp salt
- 3 garlic cloves minced or 1/2 teaspoon garlic powder
- 1 tsp garlic powder
- 1 TBSP fresh or dried dill
- 2 TBSP olive oil
- 1 TBSP fresh lemon juice
- 1 TBSP red wine vinegar
- 1 cucumber peeled and grated, squeeze as much juice out of the cucumber as possible with a cheesecloth or a paper towel
Instructions
- Place all chicken, olive oil, fresh lemon juice, red wine vinegar, greek yogurt (optional), oregano, salt and black pepper in a freezer gallon-size ziploc bag or container. Let marinate for at least 30 minutes.
- When at least 30 minutes is up and you are ready, start your couscous (or quinoa) using packaged instructions.
- While couscous (or quinoa) is cooking .start your lemon chicken by preheating the grill to medium heat and grease the grill with oil and a brush to prevent from sticking.
- Place chicken on the grill and cook for about 7 minutes on each side (depending on thickness of the chicken) or until the middle is white and reaches at least 165 degrees
- Remove chicken from the grill and let it cool for about 5 minutes. Cut into slices.
- Tzatziki sauce: place all ingredients together except the grated cucumber. If you have not already grate and squeeze the cucumber to remove water before adding to the rest of ingredients.
- Greek Chicken Bowls: Place couscous (or quinoa) at the bottom of a bowl, sliced chicken on top, with tomatoes, cucumbers, red onion, feta cheese, kalamata olives and drizzle with homemade tzatziki. If you would like add a pinch of salt and a tad of fresh lemon juice to taste.
- Serve immediately!
