




Greek Chicken Meatballs
These Greek-style homemade chicken meatballs are so full of flavor and delicious! Super easy and quick to make in the food processor and great for adding protein to any salad or bowl!
Equipment
- 1 Food processor
Ingredients
- 1/2 bunch Cilantro
- 1/2 red onion
- 1/2 frozen spinach thawed and drained
- 3 Green onion stalks
- 1/4 cup feta cheese crumbled
- 1/4 cup breadcrumbs
- 5

minced garlic - 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 chicken breasts about 1 pound
Instructions
- Preheat oven to 400℉ and grease a baking sheet, then set aside.
- Add all ingredients to the food processor except for the chicken. Pulse until chopped and combined well.
- Add chicken and pulse again until well combined.
- Using a large ice cream scooper, scoop big portions of the mixture onto a cookie sheet. If you do not have an ice cream scooper you can form the mixture into balls in the palms of your hands.
- Place balls on cookie sheet and bake for 25-30 minutes or until cooked through ad have reached an internal temperature of 165℉.
- Serve over rice, or salad with tzatziki, hummus, red onion, tomatoes, fresh dill, kalamata olives, and feta cheese if desired.
- Store in an airtight container in the fridge for up to 4 days.
This recipe is delicious! I had this for dinner on Saturday and it was very good! I highly recommend it to everyone!
