Havarti, Brussels Sprouts and Apple Grilled Cheese
A grilled cheese with a twist! This delicious grilled cheese sandwich is made with crispy, slightly chard Brussels sprouts, and sauteed green onions, with thin green apple slices, and lots of Havarti cheese! This sandwich will be your next favorite, quick comfort food choice! The flavor is exceptional, I promise anyone will love this whether you favor Brussels sprouts or not! It will make your taste buds very happy!

Ingredients
- 1 TBSP olive oil
- 3 TBSP green onion chopped (or shallot chopped)
- 2 cups Brussels sprouts thinly shredded
- 1/4 tsp salt fine
- pinch black pepper
- olive oil cooking spray or a mister
- 4 slices Tuscan whole wheat bread (or your favorite fresh bakerey bread)
- 6 slices Havarti cheese
- 2 Granny Smith apples ⅛-inch-thick slices
Instructions
- Heat a skillet on medium heat, and add olive oil and green onion*(see notes) until fragrant, about 1 minute.
- Throw in Brussels sprouts, salt and a pinch of black pepper, and turn heat up to medium-high. Stir Brussels sprouts until cooked and crispy on the edges. Remove from heat and set aside.
- Heat a griddle, or skillet to medium heat. Spray one side of your 4 slices of bread and place 2 slices on the griddle, oil side down.
- Place 2 slices of Havarti cheese on each slice of bread, 1/4 cup of the Brussels sprout mixture, a layer of apple slices, 1 slice of cheese on top of apples (to make a total of 3 slices per sandwich), and place the other slice of bread on top of each to make two sandwiches.
- Cook the sandwiches on one side, about 4-5 minutes, until cheese is melted and the bottom slice of bread is toasted and lightly browned. Flip the sandwich carefully with a spatula, oil side down. Cook until golden brown, 3-4 minutes. Serve hot!

*Green onions: can be substituted for a shallot instead. Chop shallot and cook the same as the green onions.
