No-Bake Healthy Breakfast Cookies
Perfect for a quick, hearty breakfast! And your kids will eat them, too!
Ingredients
- 1 cup Oats (gluten-free if you prefer)
- 2/3 cup Almond Butter
- 1 1/2 TBSP Honey (or more for taste)
- 2 TBSP Unsweetened coconut, shredded
- 1/4 cup Walnuts, chopped
- 1 TBSP Pepitos (also known as pumpkin seeds)
- 2 TBSP Chocolate, chopped
- 1/2 tsp Coconut oil
Instructions
- Mix all ingredients in a large bowl.
- Take about 2 TBSP of the mixture and roll it in the palms of your hands to form cookie shapes.
- Melt chocolate in the microwave with coconut oil until fully melted, then combine well.
- Drizzle the chocolate over each cookie quickly until the top is covered or for your desired amount.
- Freeze the cookies for at least half an hour or fridge for an hour before eating. Stores in the refrigerator for 4-5 days, or in the freezer for up to 2 weeks.
Notes
*If freezing: when ready to eat, take out to allow to thaw for 3-5 minutes for the perfect texture.Â
