Today was my second baby’s birthday, and I had to make her a cake fit for a true girly-girl! She is such a princess and loves anything, sprinkles and unicorns! This cake is make with gluten-free flour, but you can use regular flour if you are not gluten-free. You may also add a third layer of cake, for additional effects! Just divide the batter between the three pans instead of two. To do this use the same recipe and measurements just lower the amount of time it takes to cook by a few minutes.
This cake works well as a beautiful, plain vanilla cake, just omit adding sprinkles to the batter and frosting. This cream cheese frosting is delicious!!!
Sprinkle Birthday Cake w/ Cream Cheese Frosting (Gluten-free)
Homemade, delicious sprinkle cake with a homemade cream cheese frosting perfect for a fun birthday party or celebration!
Ingredients
- 1½ cups sugar
- 1 cup (2 sticks) salted butter
- 2 tsp vanilla extract
- 3½ cups flour (I used gluten-free)
- 4 tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1½ cups buttermilk
- 1 cup sprinkles
Frosting:
- 8 oz greek cream cheese
- 1½ cups (3 sticks) soften butter (salted or unsalted)
- 3 tsp vanilla extract
- 6 cups powdered sugar
- 2 TBSP milk
- 2 cups sprinkles for decorating
Instructions
- Preheat the oven to 350°F.
- Grease two 9 inch cake pans. Cut parchment paper to line the bottom of each cake pan and dust each pan with flour on bottom and sides.
- In a LARGE bowl, place the sugar and butter and cream with a hand mixer. Mix in vanilla extract until well combined.
- In a separate bowl, mix the eggs and buttermilk together with a fork or whisk. Set aside.
- Stir together the flour, baking powder, and salt in a separate bowl. Combine well.
- Add 1/3 of the dry ingredient to the sugar mixture, mix until just combined. Add in half of the egg mixture and combine. Add another 1/3 of the dry ingredients and then the other half of the egg mixture and combine. Follow by the remainder of the dry ingredients and combine with a hand mixer until just combined. Use a spatula to scrape the sides and bottom to make sure all is mixed well. Gently fold in the sprinkles to gently combine. Do not over combine or the sprinkles will bleed.
- Pour the batter evenly among the two prepared pans, and smooth out the top with a spatula. Bake for 30 to 35 minutes. Let sit for 10 minutes then transfer to a wire rack to cool completely before frosting (let sit in fridge or freezer if in a bind).
- For the frosting: beat together the cream cheese, softened butter, and vanilla and 2 cups of powdered sugar until fluffy. Slowly add in the rest of the powdered sugar and use milk to thin as needed. Frost the sides and in the middle of the two layers of cake and outside. Decorate with as little or as many of the remainder sprinkles as desired.
