Jump to RecipeThese are a delicious staple in our household! Both Jake and I lived in a South American country for a time and we both had lots of rice with egg on top! We love it (hard to believe since we ate so much)! A quick and hearty meal that is tasty! Jake went to Ecuador for 2-years and I, to Chile for 18-months. Make sure to cook the egg enough so that the yolk is a little runny in order to mix up with the other rice and other ingredients. So good!
The Best Sunny-Side-Up Egg + Avocado Rice Bowls
Quick and flavorful breakfast, lunch or dinner with a sunny-side-up egg, avocado, tomatoes, brown rice and garnished with cilantro, green onions and a tad bit of hot sauce! This meal is a favorite of our household that really hits the spot!
Ingredients
- 3 cups brown rice Store bought, or cooked
- 3 TBSP fresh cilantro chopped
- 3 TBSP green onions chopped
- 3/4 tsp kosher salt fine
- Olive oil spray or mister
- 5 large eggs
- Freshly ground black pepper
- 2 large Hass avocado sliced
- 2 medium tomatoes halved and thinly sliced
- Hot sauce for serving (optional) such as Frank's or Pete's
Instructions
- If you haven't already, cook the rice. Follow the instructions on the package to get it going first.
- While the rice is cooking, heat a nonstick skillet or pan over medium-low heat. Spray your skillet with olive oil and crack the eggs on the skillet. Season your eggs with a pinch of salt and pepper. Cover the eggs and allow them to cook until the whites are set around the edges and the yolk is still runny, about 2-3 minutes.
- When the rice is finished cooking, pour it in to a medium bowl and allow to cool for 5 minutes. When rice is cooled a bit, add cilantro, green onions, and 2/4 teaspoon of the salt to the rice.
- Divide the rice mixture among 5 bowls. Top each with one sunny-side-up egg, a few slices of tomato, a few slices of avocado and season with another pinch of salt over the tomato, avocado, and rice.
- Serve warm with a little hot sauce, if desired.
Notes
- For the rice, you have several options. You can make rice from dry rice the traditional style or you can buy cooked rice. Packaged cooked rice can be found either in the rice aisle or frozen aisle of the grocery store. Kroger and Trader Joe’s have packaged cooked rice that is delicious and I am sure there are choices at your local grocery if you do not have one of these stores near by.Â
