Chocolate Peanut Butter Bars
These no-bake chocolate and peanut butter bars are made with protein powder for extra protein and are a quick, easy, and delicious treat.
Ingredients
- 1 cup old-fashioned oats
- 1/4 cup almond flour
- 1/4 cup vanilla protein of choice
- 1/2 cup maple syrup
- 1 cup peanut butter (or other nut butter)
- 1 tsp vanilla
- 1/2 tsp sea salt, course
Instructions
- 1. Line an 8x8 dishpan with parchment or wax paper.
- 2. In a large bowl add the oats, protein powder, and almond flour. Gently combine until well mixed. Then add maple syrup, nut butter, and vanilla, then mix well.
- 3. Scoop the mixture into the 8x8 dish and flatten it out into bars with your fingers.
- 4. Next, melt the chocolate chips and 1 TBSP of coconut oil in the microwave for 30 seconds at a time, and then pour over the bars evenly.
- 5. Freeze for 1.5 hours minimum, cut, and enjoy!
- Note: these are a good texture right out of the freezer, but may need a minute or two to thaw out. Store in the freezer for up to a week.
