Chocolate Peanut Butter Bars

These no-bake chocolate and peanut butter bars are made with protein powder for extra protein and are a quick, easy, and delicious treat.

Ingredients
  

  • 1 cup old-fashioned oats
  • 1/4 cup almond flour
  • 1/4 cup vanilla protein of choice
  • 1/2 cup maple syrup
  • 1 cup peanut butter (or other nut butter)
  • 1 tsp vanilla
  • 1/2 tsp sea salt, course

Instructions
 

  • 1. Line an 8x8 dishpan with parchment or wax paper.
  • 2. In a large bowl add the oats, protein powder, and almond flour. Gently combine until well mixed. Then add maple syrup, nut butter, and vanilla, then mix well.
  • 3. Scoop the mixture into the 8x8 dish and flatten it out into bars with your fingers.
  • 4. Next, melt the chocolate chips and 1 TBSP of coconut oil in the microwave for 30 seconds at a time, and then pour over the bars evenly.
  • 5. Freeze for 1.5 hours minimum, cut, and enjoy!
  • Note: these are a good texture right out of the freezer, but may need a minute or two to thaw out. Store in the freezer for up to a week.
