Chocolate Peanut Butter Bars
These no-bake chocolate and peanut butter bars are made with protein powder for extra protein and are a quick, easy, and delicious treat.

- 1 cup old-fashioned oats
- 1/4 cup almond flour
- 1/4 cup vanilla protein of choice
- 1/2 cup maple syrup
- 1 cup peanut butter (or other nut butter)
- 1 tsp vanilla
- 1/2 tsp sea salt, course
1. Line an 8x8 dishpan with parchment or wax paper.
2. In a large bowl add the oats, protein powder, and almond flour. Gently combine until well mixed. Then add maple syrup, nut butter, and vanilla, then mix well.
3. Scoop the mixture into the 8x8 dish and flatten it out into bars with your fingers.
4. Next, melt the chocolate chips and 1 TBSP of coconut oil in the microwave for 30 seconds at a time, and then pour over the bars evenly.
5. Freeze for 1.5 hours minimum, cut, and enjoy!
Note: these are a good texture right out of the freezer, but may need a minute or two to thaw out. Store in the freezer for up to a week.
