These delicious peanut butter chocolate chip no-bake, no food processor energy balls are easy to make and only have eight ingredients! You will love having them as a healthy pick-me-up or snack.
After having my last baby, my friend introduced these to me, and I was “in love at first sight”. These were my favorite breastfeeding mom food. They have lots of quick energy and they are so tasty and addicting. If I woke in the night hungry, they were easy to pop in my mouth for a quick snack. They have the perfect amount of sweetness from the honey, coconut, and chocolate chips to curb sugar cravings when feeling ravenous as a new mom or for anyone on busy at-home or workdays.
Jump to RecipeI keep these in my freezer for a healthy snack and to keep me going on busy days. I normally double or triple the recipe to make a ton of them. These are pretty customizable as well. You can add or omit ingredients, as desired.
Energy Balls (Gluten-free + Dairy-free)
Ingredients
- 1 cup old fashioned rolled oats (G.F. oats for a G.F. option)
- 1/2 cup Nut or seed butter (i.e. peanutbutter, almond butter, sunflower, etc.)
- 1/4 cup honey
- 1/4 cup unsweetened coconut chips, shredded, or both
- 1/4 cup mini chocolate chips dairy-free
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla
- 1/8 teaspoon salt
Instructions
- Place all of the ingredients in a large bowl and stir together with a wooden spoon, spatula, or your hands, until well combined.
- Cover the energy ball "dough" and place it in the fridge for at least 30 minutes to an hour to allow the mixture to set up a little.
- Bring dough out of the fridge and use a melon or ice cream scoop to make bite-size balls.
- Store balls in a covered container or freezer-baggie in the fridge or freezer (will keep for 7 days in the fridge and 14 days in the freezer).
