Energy Balls (Gluten-free + Dairy-free)

These delicious peanut butter chocolate chip no-bake, no food processor energy balls are easy to make and only have eight ingredients! You will love having them as a healthy pick-me-up or snack.

Ingredients
  

  • 1 cup old fashioned rolled oats (G.F. oats for a G.F. option)
  • 1/2 cup Nut or seed butter (i.e. peanutbutter, almond butter, sunflower, etc.)
  • 1/4 cup honey
  • 1/4 cup unsweetened coconut chips, shredded, or both
  • 1/4 cup mini chocolate chips dairy-free
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Instructions
 

  • Place all of the ingredients in a large bowl and stir together with a wooden spoon, spatula, or your hands, until well combined.
  • Cover the energy ball "dough" and place it in the fridge for at least 30 minutes to an hour to allow the mixture to set up a little.
  • Bring dough out of the fridge and use a melon or ice cream scoop to make bite-size balls.
  • Store balls in a covered container or freezer-baggie in the fridge or freezer (will keep for 7 days in the fridge and 14 days in the freezer).
