Energy Balls (Gluten-free + Dairy-free)
These delicious peanut butter chocolate chip no-bake, no food processor energy balls are easy to make and only have eight ingredients! You will love having them as a healthy pick-me-up or snack.

- 1 cup old fashioned rolled oats (G.F. oats for a G.F. option)
- 1/2 cup Nut or seed butter (i.e. peanutbutter, almond butter, sunflower, etc.)
- 1/4 cup honey
- 1/4 cup unsweetened coconut chips, shredded, or both
- 1/4 cup mini chocolate chips dairy-free
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla
- 1/8 teaspoon salt
Place all of the ingredients in a large bowl and stir together with a wooden spoon, spatula, or your hands, until well combined.
Cover the energy ball "dough" and place it in the fridge for at least 30 minutes to an hour to allow the mixture to set up a little.
Bring dough out of the fridge and use a melon or ice cream scoop to make bite-size balls.
Store balls in a covered container or freezer-baggie in the fridge or freezer (will keep for 7 days in the fridge and 14 days in the freezer).
