Chocolate Peanut Butter Eggs
Everyone's favorite Easter time treat, these no-bake chocolate peanut butter Easter eggs are made with natural peanut butter, vanilla protein powder, and stevia-sweetened chocolate chips! They are a homemade version of Reese's Peanut Butter Eggs, but you can feel better about eating them as they are healthier and packed with protein instead of refined sugar! Well-worth it, and so tasty!
Ingredients
Peanut Butter Filling
- 1/2 cup Peanut butter, creamy look for only salt and peanuts ingredients
- 5 TBSP preferred vanilla protein powder
- 3 TBSP maple syrup
- pinch of salt
Chocolate Coating
- 1 Cup Chocolate chips (or chocolate bar), stevia-sweetened
- 1 tsp coconut oil
White Chocolate Drizzle
- 1/3 cup White Chocolate chips Stevia-sweetened
- 1 tsp Coconut oil
Instructions
- Add Peanut Butter Filling ingredents together until well combined.
- Form Peanut Butter dough into Egg shapes and place on a cookie sheet or plate and place in the freezer for 30 minutes.
- When eggs are done in the freezer mix chocolate coating ingredients together and melt in the microwave for 15-30 seconds at a time, and stir. Repeat, until chocolate is all melted and coconut oil is combined in.
- Dip eggs in the melted chocolate and flip over to cover completely, and return to freezer for 30 more minutes.
- If desired, melt white chocolate drizzle ingredients with coconut oil, and drizzle over eggs when finished in freezer (see notes). Then enjoy!
Notes
*For the chocolate, Lilly's is a good brand to use that is less sugar if that is what you are going for.Â
*Note: Eggs are a pretty good texture right out of the freezer but you may want to allow them to thaw for 3-5 minutes to soften up a little more.Â
