1/2 cupchocolate chips(can buy dairy-free for a dairy-free option)

Heat oven to 350°F, and line a cookie sheet with parchment paper or a silpat mat.
Place brown sugar, peanut butter, egg, and baking soda in a medium bowl. Mix well with a spoon or in a mixer and combine well. The dough will be grainy from the sugar, but fluffy.
Fold in chocolate chips with a spatula until combined.
Roll dough into balls somewhere in between the size of a ping pong and golf ball. A little bigger is better. Then, with a fork press the tops down to flatten the balls into cookie shapes.
Bake for 12-14 minute (depending on your oven), a little gooey is better, do not over cook. Let cool for 5 minutes, and enjoy warm!
