Cheeseburger Lettuce Wraps (Gluten-free)

These delicious homemade and flavorful patties are so good you don't need the bun! Wrapped in Romaine lettuce with all the flavor instead of all the calories; so tasty and filling!

Ingredients
  

Hamburger Patties:

  • onion, chopped
  • 3 lbs ground beef *leaner the better (10% fat or less); (see notes below)
  • 3 eggs
  • 1/2 cup gluten-free bread crumbs
  • 2 TBSP flaxseed meal
  • 2 tsp garlic powder
  • ½ tsp salt
  • lettuce romaine, butter, bib, iceburg

Toppings:

  • 8 slices cheese such as cheddar, american, or colby (choose your favorite)
  • tomato
  • mustard
  • avocado
  • ketchup
  • Mayonnaise

Instructions
 

  • Heat a pan to medium heat, and place a tablespoon of olive oil in the pan. Place chopped onions in the pan and cook until tender.
  • Heat grill (or skillet) on medium heat
  • In a large bowl, mix together the ground beef, egg, gluten-free bread crumbs, flax seed meal, garlic powder, and salt until combined well (use hands to really incorporate ingredients into the meat).
  • Divide mixture into 8-10 sections then roll each into a ball. Press each ball down to flatten into a patties.
  • Grease grill grates to prevent patties from sticking and place patties on the grill. Cook for approximately 4 minutes on each side or until cooked to your preference.
  • When burgers are almost done and cooking on last side, place a slice of cheese on each burger, and turn off heat. Close grill for approximately 2 minutes more, or until cheese melts.
  • Transfer burgers to a plate and allow them to cool for a few minutes. Place each burger on a large lettuce leaf. Top with your favorite condiments, one slice of tomato on each patty and whatever other ingredients you like.
  • Wrap the lettuce up over the top of burger and serve immediately.

Notes

*Just a note to choose a lean ground beef whenever making hamburgers. If the beef is really fatty and oily your patties will fall apart on the grill. The beef I used was actually very lean 94% lean and 4% fat. I do not think you need that lean, but something around 10% fat and 90% lean is good. :)
