Easy Banana Oat Pancakes w/ Blueberries

Fluffy, and, easy gluten-free pancakes only made with 6 ingredients! Made with just banana, almond milk, G.F. oats, egg, baking powder, and vanilla these pancakes are flavorful, and delicious. You will love these, topped with maple syrup, butter, and blueberries to enjoy for a good start to your day!

Ingredients
  

Ingredients:

  • 1 very ripe banana
  • 1 cup Almond milk
  • 1 cup gluten-free oats (I used Bob's Red Mill)
  • 1 egg
  • tsp baking powder (Aluminum-free)
  • 1 tsp vanilla

Toppings:

  • maple syrup
  • blueberries
  • butter

Instructions
 

  • Place the banana, almond milk, and oats in a blender and mix until smooth (it is important to keep blend these ingredients first before adding the next).
  • Add the egg, baking powder, and vanilla to the blender, and blend until combined.
  • Grease a griddle or pan with coconut oil, or olive oil (or butter if you are not doing dairy-free). Turn the heat to medium or about 300°.
  • Using a 1/4 measuring cup, pour batter on the griddle, or pan, to form your pancakes.
  • If you would like to add anything additional (berries, bananas, chocolate chips, etc.) now is the time to do so.
  • Cook until big bubbles form on the surface and the edge appears to be firm. This should only take 2 or 3 minutes).
  • Flip each pancake, and cook for another couple of minutes, until both sides are golden brown. Repeat until all of the batter is gone. Makes 9 pancakes.
  • Serve hot with lots of butter, maple syrup, and blueberries!

Notes

*Makes about 9 pancakes.  You may need to double the recipe as needed for families and larger groups. 
*If you wish to eat dairy-free, leave the butter off.
