Yield: 5 people
- 5 russet potatoes throughly washed
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 2 TBSP garlic minced
- 1 TBSP garlic powder
- 1/4 cup fresh parsley chopped
- 2 TBSP sesame seeds black and white
Preheat oven to 400°F. Line a cookie sheet with parchment paper (you may need two) and set aside.
Cut each of the potatoes in half lengthwise, then cut them in half lengthwise again, then cut in half lengthwise again, until you have 8 nice wedges that are the same size and thickness.
Chop parsley with a food chopper or knife (save some for garnish).
Place the wedges, skin down, on the cookie sheet. Place remaining ingredients in a quart or gallon-size zip-lock freezer baggie and mix until combined.
Drizzle your garlic dressing over each potato wedges and use your hands or a brush to mix, until each wedge is covered completely with the dressing.
Bake for about 30-35 minutes, turning/moving wedges halfway through the baking time, until golden brown, crispy, and cooked through (tested with a fork).
Sprinkle with parsley and sesame seeds, if desired, and serve hot with your favorite sauces!
